“Bak Kut Teh” which oftenly one of the favourite food taken not only by locals but also visitors especially chinese religious. Mr. Chan Fook Wah (Ah Wah) who born in year 1971 in Negeri Sembilan is the founder of “Restoran Shi Wah” bak kut teh at Permas Jaya, Johor operating together with wife Ms. Chang Kui Lee.
Ah Wah who with age of 43 years old currently, grown up in Johor formerly worked as lorry driver in Singapore before returned to home country. Ah Wah who having his vision to operating his own small business finally decided to quit his job and came back to Johor, and with his extreme interest in food and beverage in the year 2004 initially stepped into the industry at his age of about 33 years old when met his so called master in Kulai, Johor generated his home recipe to Ah Wah then subsequently in the same year itself Ah Wah established his very first food restaurant named “Restoran Shi Wah” bak kut teh at Jalan Permas 9/7 for two years then due to great response from the public enabled him to expose further to bigger corner lot at Jalan Permas 9/5 till recent serving his bak kut teh and famous asam fish.
While his wife Madam Chang who born in Johor in the year 1970 formerly only an full time housewife stepped into the food and beverage industry in the year 2004 assisting husband in the restaurant. Their next generation will have Chan Jia Le (eldest son), Chan Jia Ji (second son) and Chan Jia Shien (youngest son) who also will helping parents currently during their school holiday.
In the restaurant, their kulai tradition soup bak kut teh which served in bowl will be the top recommended menu with the secret recipe soup base boiled for at least 1.5 hours inside with chinese herbals, fresh giant bones and fresh pork meats brings the exotic taste that cannot missed. The pork trotter which boiled in their bak kut teh soup base or known by them ‘white port trotter’ also one of the most wanted by regulars which need to be advanced booking. Besides, the white pepper pork stomach which boiled in their home recipe pepper soup base too one of the best choice when stepped into the restaurant. Somemore, for those who like sour must try Ah Wah’s black vinegar pork trotter braised overtime with his secret recipe sauce presenting the best chewing bites when taken the pork trotter into mouth. Rather then pork, they also promoting the yellow wine chicken which using hand made tradition rice wine boiled with fresh chicken drumstick will also the visitors favourite. In fish menu, you must try the asam fish cooked using the home recipe asam paste served with lady fingers and tomatoes inside brings the best eatery. Nonetheless, once a week only on Sunday they will serve their very famous signature braised pork trotter which keep public waiting, only have the chance to eat on sunday in the restaurant.
