Found easily everywhere the pork spare ribs recipes in respective chinese cuisine restaurants in Malaysia, or one of the famous these days will be the cold & hot spare ribs combination also known “Ice Poured Spare Ribs” which practised in most of the restaurants. But here in Station 18, Ipoh we found to be recognised the “Restoran Yit Chieng” which carried by Liew family introducing their authentic “Ice Mountain Spare Ribs” to the public since year 1999.
The local Ipoh originated Mr. Liew Chan Choon who born in year 1965, was the founder and immediate owner of the well known “Restoran Yit Chieng” seafood & chinese cuisines restaurant at Pasir Puteh, Ipoh. Being assisted by wife Madam Chong Choi Yock, son Liew Lip Khun (born 1989) and youngest daughter Esther Liew Yee Theng (born 1993) presenting all their home recipe selections to the locals and visitors in an air-conditioned eating house.
Liew Chan Choon or known Chef Liew who at his age of 50 currently, having nearly 40 years experience in chefing career initially stepped into the industry at his age of 13 in year 1978, been recruited into the “Kwok Kee Restaurant”(pronouns) at Ipoh began as kitchen trainee where he touched the chinese cuisine field spent 3 years there. Then joined “Teck Kee Restaurant” for a year before reached Kuala Lumpur in 1980s to further his profession.
Later on, Chef Liew been stepped into Negeri Sembilan, Pahang and also travelled to Singapore at end 1980s to sharpen his chefing experience. Finally ended his employment career in 1990s spent 6 years in “Moon Gade Restaurant” in Ipoh, successfully established his very 1st and owned restaurant named “Restorsn Yit Chieng” at Taman Cempaka in year 1999 serving his seafood and chinese cuisines recipes to the public. Exposed into Station 18, the recent location, after 3 years since 2002.
While son Liew Lip Khun who at his age of 26 years old recently, touched the industry at his age of 13 years old as kitchen trainee helping father in the restaurant, been experienced in the “East Ocean Restaurant” as assistant chef in 2001 to strengthen his profession. Nowadays being carried the responsibility as 2nd chef in “Restoran Yit Chieng” to be the second generation.
In this restaurant, the founder’s top recommended in menus surely will be their Signature “Ice Mountain Spare Ribs”. Selected pork ribs marinated for 3 hours in their more than 10 recipes mixture, deep fried then stir fried with their homemade sweet sauce from 6 spices, finally served in the in-house homemade mountain shaped ice cube brings unbelievable exotic taste in hot, following by cold you must have a try when reached Ipoh, Perak.
Secondly will be their Volcano Beancurd, which also among the recommended. Homemade beancurd from fresh soy milk and egg, steamed an hour, then deep fried to be served poured onto recipe sauce mixed with minced pork, mushroom shredded and topped with deep fried “popiah skin” and vege shredded, boiled in flaming pot you cannot aside.
Another will be their Bamboo Prawn, which prepared in spicy curry taste. Local fresh “Ming” prawn used, stir fried with their home recipe curry paste made from more than 30 ingredients mixture, then served in bamboo above flame you will never regret after consumed, especially the dry curry taste itself into mouth.
Moreover, the owners too introduced their newly practised sour & spicy deep fried eggplant or locally known “Jing Zhi Yi Ye”. Selected eggplant prepared in skin-off condition, deep fried with recipe flur then served on their homemade sauce made from 8 spices mixed with sesame seeds will be one of the best eatery in town you ever tasted.
Nonetheless, their Green Curry Seafood prepared using homemade geen curry paste made from more than 30 ingredients mixture, stewed 10 minutes with grouper fish slice, squid and prawn, then served boiled in flaming hot wok you cannot missed when stepped into the “Restoran Yit Chieng” at Station 18, Ipoh Perak.
