MOTHER’S HOME-COOK RECIPES BEING RECOGNISED AS ONE OF THE BEST IN EAST COAST AT “BIG BAND” @ PAHANG

Commonly found various in menu leading towards Western or Asian Cuisines in a coffee house or concept cafe practised in our nation Malaysia, also in the East Coast.  But here in a Pahang’s small town “Raub”, we found differ from the others, the “Big Band” which favourites with their mother’s generation passed onto home cook chinese cuisine recipes presenting to the public in an environmental concept cafe restaurant.

The Raub local originated Madam Chris Cheong Seet Yin who born in year 1964, also the cafe’s initial main chef, together with husband Mr. Aaron Lim Ah Kai (born 1956) who from Temerloh, daughter Irennia Lim Sze Mun (born 1985) and son Wilson Lim Wai Sum (born 1990) were the founders and recent owners of the local well known “Big Band Cafe” since 2013, serving most of their home signature menus to the locals and visitors in Raub, Pahang.

Madam Chris Cheong who at her age of 51 years old currently, was formerly a full-time housewife all the while from teenager having great interest in eatery and hold excellent chefing experience initially been touched the f&b industry in 1990s in Raub with husband Aaron Lim (was formerly in Mechanical Industry) running a seafood stall and later on also a noodle stall, but shortly.

Subsequent to Aaron’s retirement, wife Chris’s experiences in the eatery and being foreseen the market opportunity in the f&b industry enabled the Lim family, husband & wife added with the supports from daughter Irennia and son Wilson allowed them in year 2013 successfully established their very 1st and owned eating house named “Big Band Cafe” at Bandar Raub Perdana, introducing began with Chris’s authentic home recipes.

In Big Band, the founder’s first top recommended in menus surely will be their mother’s home-cooked Pan Mee which prepared in handmade & homemade.  Soup base boiled 2 hours with pork bones, beansprout and ikan bilis, then cooked mixed into their in-house made noodles (Pan Mee) then served topped with deep fried crispy ikan bilis, pork minced, dried beancurd skin and fried onions brings the best in town you must try.  Especially the noodles bites texture itself and the soup taste into mouth.

Secondly will also from their mother’s home recipe, the Prawn Noodles which among the regular’s most wanted.  Soup base prepared from homemade few-hours fried prawn paste made mixtures of more than 10 recipe ingredients, then cooked with yellow noodles, fresh prawn, kangkong, pork slice, meat ball, fish ball and sided with boiled chicken egg will be a perfect complete bowl of “Big Band Prawn Mee” brings fantastic exotic prawn freshness in taste you cannot aside.

Another will be their Big Band Platter of 3, among the top seller which served with combination of chicken wing, squid and fish.  Also the youngsters favourite in this cafe restaurant.  Deep fried chicken wings after marinated, sided with deep fried dolly fish fillets and recipe flour-up deep fried squids taken tipping onto chilli sauce provided you will never regret after tasted.  One of the best snacks selection among the signature recommended.

Moreover, their Hakka traditional homemade “Yong Tau Foo” with choices of eggplant, bittergourd, lady finger, red chilli, dried beancurd skin and dried beancurd (Tau Pok) too available in this cafe.  Insided mixtures of pork minced, fish and added into salted fish brings very authentic eatery neither found elsewhere, only in “Big Band” served in deep fried or boiled on customer’s request.

Nonetheless, the owners also introduced their “Sotong Kangkong” or known “Rojak Sotong” which is one of our Malaysian local delicacy eatery practised since decades.  Mixtures of boiled cuttlefish and local “kangkong” veges served poured onto homemade sweet sauce, and topped with peanuts shredded & sesame seeds then mixed into slight sesame oil and onions oil you cannot missed when stepped into the “Big Band Cafe” at Raub, Pahang.
