FIND CHEF TUNG’s FAMILY RECIPE IN “KONG MING”, BEING EXPOSED TOWARD SUCCEED INTO 4TH GENERATION

In our nation Malaysia, there are lots of f&b families been practiced by generation to generation still carried recently on respective recipes all having their own road-to-today story kept silent unknown by the market.  Here in Seremban, Negeri Sembilan we found and being recognised one of the Tung’s 4-generation f&b family still running in “Kong Ming”, and known as one of the best restaurant in town.

The local originated Mr. Tung Siew Mun (4th generation) who born in Seremban year 1980, together with his lovely wife Ms. Chai Kin Shin (born 1982) both are the recent owners of the local famous “Kong Ming Oakland Restaurant” chinese cuisine eating house introducing their family generation recipes and signature menus to the public at Oakland Commercial, Negeri Sembilan.

Talking about the Tung family, which began with their 1st generation’s chicken rice along town market corridor.  Then later on been exposed by 2nd generation into roadside food stall by Siew Mun’s grandparents since year 1945.  Only initially in year 1970s being took over by his father Mr. Tung Chin Tai (born 1949), the 3rd generation, in their family’s chinese restaurant named “Kong Ming” at Jalan Lemon, Seremban where Siew Mun touched the career since his age of about 12 years old helping parents in the restaurant.

While Tung Siew Mun or famously known Chef Tung at his age of 35 years old currently, also the 4th generation cum recent owner, with the encouragement by parents allowed him stepped into the industry after education and recruited himself into the “Ku-Su Association” in Kuala Lumpur at his 22th spent half a year experienced his chefing profession, then took up the responsibility to continue carry their family “Kong Ming” restaurant in Seremban, Negeri Sembilan.

With the great response from market, experiences hold by Chef Tung and wishing to expose further enabled him successfully established his very 1st owned conceptual chinese cuisine air-conditioned restaurant named “Kong Ming Oakland Restaurant” at Oakland Commerce Square, Seremban 2 in year 2011, being assisted by wife Kin Shin.  Then another eating house in 2013 at Templer Business Park, continued by next at Taman Temiang.  Also coming up another at Labu in year 2015 to be grouped under “Kong Ming Restaurant” by Chef Tung.

In this restaurant, the owner Chef Tung’s first top recommended in menus will be their Signature Ice-Mountain Pork or locally known “Ku Lou Yuk” which favourite by their visitors.  Local fresh pork prepared in deep fried with their recipe flour, mixed seconds stir-fried with home sweet & sour sauce, then served topped covered by ice cubes brings very fantastic dish you must try when reached Seremban.  Crispy bites and authentic taste into mouth brings very unbelievable eatery you neither found elsewhere, only in “Kong Ming” at Oakland, Seremban.

Secondly will be one of their restaurant’s top seller among menus, the Claypot Chicken with Fish Sheet or famously known “Dancing Chicken”.  Chicken meat fillets prepared in stewed & boiled in claypot mixed with eggplants and homemade 3 recipes Japanese sweet & salty sauce, then served topped with imported fish sheet brings very outstanding option you cannot aside.

Another will be their Herbal Stewed Pork Trotter, also one of their family traditional generation eatery still being practised by Chef Tung on home recipe.  Whole pork leg steamed half an hour with carrot and  their in-house 10 ingredients mixture included chinese herbals, prepared in boneless then served poured onto the recipe stewed sauce, and sided with broccoli & mushroom really brings excellent chinese cuisine selection you will never regret after tasted.  Especially the delicious herbal taste into mouth and meat bites texture you should experience.

Nonetheless, the owner Chef Tung also introduced his Swiss Chicken Wings which highly favourite by their regulars recently.  Chicken wings marinated few hours with 6 spices mixture, prepared in deep fried then served after seconds stir-fried with home sweet & sour swiss sauce brings exotic taste you cannot missed when stepped into the “Kong Ming Oakland Restaurant” at Oakland Commerce Square Seremban, Negeri Sembilan.
