TASTE AH DI’s 25 YEARS CHEFING EXPERIENCE RECIPES IN NEW “KAM LOI” AT THE UNIVERSITY TOWN
One more chinese seafood cuisine restaurant being found and recognised as among the recommended in Negeri Sembila, located at Nilai or locally known the “University Town” running by the 25 years experienced Chef Su in “Restoran Kam Loi” serving not only authentic chinese cuisine but also seafood recipes to the locals and visitors under a roof.
The Perak originated Mr. Su Sing Hing who born in year 1972, together with his wife Ms. Ngo Hea Peng (born 1973) both were the founders and immediate owners of the recommended “Restoran Kam Loi” in Putra Indah, Nilai introducing their signatures to the public since 2007. Being assisted by Su’s parents and also family members, having great response from the market.
Su Sing Hing or known Ah Di who at his age of 43 years old currently, all the while having great interest in eatery and chefing enabled him initially stepped into the f&b industry in year 1989 at his 17th in Klang, Selangor joined his aunty’s chinese cuisine restaurant began as kitchen trainee spent 2 years there before reached Singapore to further his career in year 1991.
After a year, Ah Di with the supports from father Mr. Su Diong Kee (born 1944), started running their very first eating & coffee house “Hong Yun Kopitiam”(pronouns) in Kuala Lumpur for about 7 years, where his wife Hea Peng entered into the industry helping in the coffee house. And where Ah Di presenting his own cuisine recipes in their kopitiam before moved to establish another restaurant “Soon Fatt Restoran” along Old Klang Road for another 5 years.
While in year 2002, Ah Di foreseen the market opportunity in the f&b industry at this “University Town” made him established “Restoran Kam Loi” began at Taman Semarak, Nilai introducing his chinese seafood cuisines, then in year 2007 moved to Bandar Baru Nilai continue expose and being recognised as one of the best in town 2015.
In “Kam Loi”, the founder’s first top recommended in menus will be their famous Assam Fish. Local Talapia fish commonly selected, prepared in about 8 minutes steamed, then served poured onto homemade assam paste which made from more than 10 ingredients mixture, also mixed with lady finger, long bean, eggplant, onion, red chilli and tomato brings sour & slight spicy taste you must try when reached Nilai.
Secondly will be their Thai Style Pork Knuckle, which also one of the restaurant’s signature favourites by visitors. Local fresh pork knuckle prepared in braised for 1&half hours with more than 10 ingredients, then deep fried for another 5 to 6 minutes and served with home sauce brings sweet, sour & spicy taste you cannot aside. Especially the knuckle’s crispy skin level and meats texture itself in bites into mouth, neither found elsewhere better in the town.
Another will be their Golden Stick Mushroom Beancurd, which also among the regulars most wanted selection in this restaurant. Homemade beancurd from fresh soy molk and chicken egg prepared in half hour steamed into round shape, deep fried then served poured onto Ah Di’s home recipe paste sauce mixed with golden stick mushroom you will never regret after tasted. The beancurd smoothness with authentic soy bean taste you will found fantastic.
Moreover, the owner also introduced one of the restaurant’s top seller “Salted Egg Squid” on chef’s recipe only in this restaurant. Fresh squids selected and prepared in deep fried with recipe flour, then served after seconds stir-fried with salted egg shredded prepared in-house brings exotic salty taste and excellent squid bites texture into mouth you cannot missed when stepped into the “Restoran Kam Li” at Bandar Baru Nilai, Negeri Sembilan.
