THE CHAM BROTHERS’s EXPOSURE ON THEIR HOMEMADE “DIM SUM” ON-GOING IN THE SOUTH (JOHOR BHARU)
Talking about “Dim Sum” or commonly known by the locals “Hong Kong Dim Sum”, which one of the chinese’s favourites eatery practiced since thousand years ago generation passed-onto originated from China, frequently taken as breakfast. But nowadays can be served from day to night time on request. Here in Johor Bharu, we found and being recognised one of the best recommended dim sum restaurant “Yit Foong City” running by the Cham brothers since year 2012.
Both the local origins Mr. Desmond Cham Shweh Yit who born in year 1986, and younger brother Sam Cham Shweh Seng (born 1993) both were the initial founders and current owners of this recognised “Yit Foong City Restaurant” at Taman Gaya, Ulu Tiram introducing most of their homemade and fine cantonese dim sum selections under a roof to the locals and visitors into the 5th years.
Desmond Cham who at his age of 30 recently, been touched the field since 15th worked as part-timer in 2001 at hometown Johor Bharu. Later recruited himself into the chefing association acedamy in Kuala Lumpur after education at 21st of age fully stepped into the industry. Began his kitchen trainee career in “Tai Tong” chinese cuisine restaurant, then joined “Dynasty Dragon Group” as dim sum chef before returned to Johor year 2012.
While Sam Cham who formerly in Furniture Industry, due to interest in f&b added with the experiences hold by brother in the career, also with the mission to expose further in the field allowed the brothers Desmond and Sam in year 2012 successfully established their very first and owned eating house named “Yit Foong City Restaurant” at Ulu Tiram, Johor. Where Sam Cham began his journey in the career under brother Desmond’s supervision, also another brother Jason Cham who also a dim sum chef.
In “Yit Foong” Dim Sum, the owners firstly recommended their top signature menu Shanghai Siu Loong Pau which served daily fresh steamed. Soup base which boiled 6 hours with matured chicken, big bones, pork trotter, chicken feet and pork skin mixed with hand smashed pork minced recipes, followed wrapped with their in-house flour wrapper made added into fresh milk, then served 3 pieces in a set after 6-7 minutes steamed you must try when reached Johor Bharu. Especially the soup base taste and chewing hand smashed pork minced into mouth.
Secondly will be their Char Siew Pau (Roasted Meat Bun), which made with chicken meat among the restaurant’s top seller. Homemade chicken meat roasted with 12 ingredients home recipe sweet sauce, mixed into onions shredded, followed wrapped inside with their traditional oldies-made flour bun and skin, steamed about 5 minutes to cook, then served after another 3 minutes steamed will be one of the best Char Siew Pau in town you cannot aside.
Other than Char Siew Pau, their Custard Bun also among the signature likes by the visitors. Also known “Exploring Bites Bun” by their regulars. Mixtures of butter, salted egg yolk, fresh milk and coconut milk made in paste, then placed insided their homemade flour bun and steamed in total 8 minutes brings an unbelievable exploring custard bun you will never regret after taken in this restaurant.
Another will be their Siew Mai, which fully made from in-house hand smashed pork minced mixed with fresh shrimp steamed about 8 minutes to be served on table. Also their very recommended Treasure Seafood Fins Soup Dumpling which favourites by the visitors. Mixtures of main 8 treasures raw material such sea cucumber, baby bamboo, fresh & dried scallop, shrimp, crab meat, crab stick and mushroom wrapped with 100% egg made flour-wrapper then steamed 12 minutes inside their in-house boiled soup base ready brings the best eatery you neither found better in town.
Nonetheless, owner Sam Cham also strongly introduced his own creation Fresh Oyster Fried Noodles which recently favourites by the customers. Wantan noodles selected, deep fried, follwed by mixed fried in a minute with chicken meat slices, beansprouts and into home cooked mushroom soup base brings the gravys, then served topped with fresh oysters you cannot missed when stepped into this “Yit Foong City Restaurant” at Taman Gaya, Ulu Tiram (Johor Bharu).
